Blueberry Smoothie With Tofu
Cool off on a hot day with a sip of fresh blueberry smoothie. The tofu provides easy-to-digest protein and the blueberries are chock-full of antioxidants. During a flare, reduce or avoid the agave.
Yields: 4 portions (1 cup each appx)
2 cups blueberries, frozen
1 cup tofu, silken
2 tablespoos agave
1 cup soy milk, cold
Method of Preparation:
1. Combine all ingredients and puree in a blender with the ice until smooth. Adjust consistency with more soy milk. Serve in frozen glasses.
